You Tiao with Foul Mesdames is a delicious East-meets-Middle-East fusion dish where crispy Chinese fried dough is dipped into a rich, spiced tomato and egg stew. The crunchy you tiao replaces bread, giving each bite a satisfying texture and a unique twist. It’s bold, comforting, and incredibly easy to make for brunch, lunch, or a cozy dinner.

This dish takes the crunchy comfort of you tiao and pairs it with the rich, spiced-up stew of foul mesdames. It’s perfect for brunch, lunch, or even a cozy dinner when you want something a little different.
You Tiao Man
Prepare the ful medames base
Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until softened. Add garlic and cumin, stir for 1-2 minutes until fragrant.
Add beans and simmer
Add the drained fava beans to the pan. Stir to coat with the aromatics. Season with salt & pepper. Pour in a little water if needed (just to help loosen the texture). Simmer for about 10 minutes until the beans are warm and the mixture has thickened somewhat.
Mash and finish
Use the back of a fork or potato masher to gently crush some of the beans so you get a mix of whole and broken beans (for texture). Stir in the lemon juice. Remove from heat.
Reheat the you tiao
While the bean stew is finishing, reheat the you tiao: either lightly pan-fry, air-fry, or oven-crisp until golden and crunchy. Then slice into dipping sticks.
Serve
Spoon the foul mesdames into a bowl, garnish with fresh parsley or coriander. Place the you tiao sticks on the side for dipping. Enjoy the contrast of crunchy you tiao with the warm, spiced bean stew.
