Pairing it with crispy you tiao is a natural match, offering the perfect tool for scooping up every last drop of sauce. Traditionally, mantou is served with chili crab, but swapping it for you tiao adds a lighter crunch and a more playful texture that soaks up the gravy beautifully.
This pairing celebrates the joy of communal eating — hands-on, messy, and utterly satisfying. Whether served for a special occasion or as a show-stopping centrepiece, you tiao with chili crab is comfort food with unmistakable Singaporean flair.

1. Build the chili base Heat oil in a wok over medium heat. Add garlic and ginger, stir-fry until fragrant.
Add chili paste, ketchup, and chilli sauce. Fry gently for 1–2 minutes until aromatic and slightly thickened.
2. Cook the crab Add the crab pieces and toss to coat evenly with the sauce.
Pour in the stock, cover, and simmer for 10–12 minutes, stirring occasionally, until the crab is fully cooked and the shells turn bright red.
3. Balance and thicken Season with sugar and salt to taste. Slowly drizzle in the beaten eggs while stirring gently to create silky egg ribbons. Simmer for another 1–2 minutes until the sauce thickens.
4. Prepare the you tiao Reheat the you tiao until crisp:
Air fryer: 180°C for 3–4 minutes
Oven: 180°C for 5–7 minutes
Pan: Lightly toast until golden
Cut into long dipping sticks.
5. Serve Transfer the chili crab to a large serving plate and garnish with spring onions or coriander.
Serve immediately with hot, crispy you tiao on the side — perfect for dipping, scooping, and soaking up the rich chili gravy.
