Kimchi Preparation

1. Wash the cabbage under running water.

2. Cut off the stem.

3. Separate the leaves.

4. Place them in a bowl, such that every piece can be submerged into the water.

5. Fill the bowl with just enough water to submerge the cabbage leaves.

6. Sprinkle salt into the water.

7. Let it rest for 10 minutes.

Kimchi Sauce

1. Mix the garlic, ginger, sugar and fish sauce in a bowl.

2. Add Korean red pepper flakes to own preference. The more you add, the spicier it is.

3. Chop the radish into strips.

4. Chop the scallions into pieces.

5. Mix the radish and scallions into the sauce.

6. Let it rest in the fridge.

You Tiao

1. Place it in the air fryer, 200°C for 5 minutes.

Assembling

1. Wash the salted cabbage leaves under running water.

2. Shake the water out of the cabbage leaves. 

3. Leave them on the strainer if needed.

4. Place the cabbage leaf onto a cutting board.

5. Spread the kimchi sauce onto the cabbage, enough to coat the surface.

6. Place the You Tiao onto the cabbage.

7. Cut them into bite sized pieces.

8. Serve while the You Tiao is still crispy.
