Ingredients

For the Chicken Chop

1 boneless chicken thigh (skin-on preferred)
Salt & pepper to taste
1 tsp garlic powder
1 tsp onion powder
1 tbsp soy sauce
1 tbsp cooking oil

For the Vegetables

1 cup broccoli florets
1 medium carrot, sliced
Salt to taste

For the Gravy

1 tbsp butter
1 tbsp flour
½ cup chicken stock
1 tsp soy sauce
Black pepper to taste

For Serving

1 handful You Tiao Chips

Directions

Step 1: Prepare the chicken Season the chicken thigh with salt, pepper, garlic powder, onion powder, and soy sauce. Let it marinate for at least 10 minutes.
Step 2: Cook the vegetables Bring a small pot of water to a boil. Add the carrots and cook for 2–3 minutes, then add the broccoli. Blanch until tender-crisp, about 2–3 minutes more. Drain and set aside.
Step 3: Pan-sear the chicken Heat oil in a pan over medium heat. Place the chicken thigh skin-side down and cook until the skin is golden and crispy, about 5–7 minutes. Flip and cook for another 5–6 minutes, or until fully cooked. Remove and let it rest before slicing.
Step 4: Make the gravy Using the same pan, melt the butter. Stir in the flour to form a roux. Cook for 1 minute, then gradually whisk in the chicken stock. Add soy sauce and black pepper. Simmer until the gravy thickens.
Step 5: Plate the dish Arrange the sliced chicken chop on a plate. Add the broccoli and carrots on the side. Drizzle the chicken generously with gravy.
Step 6: Add the you tiao chips Scatter a handful of you tiao chips on the side or on top for a light, crispy contrast to the saucy chicken.
